Baked Oatmeal with Blueberries & Lentils

Adapted from the baked oatmeal in Super Natural Every Day, by Heidi Swanson

Overnight oats with lentils for added protein and fiber!

Our Cracked Oats are like steel cut – a little more hearty. 


1 1/2 cups Maine Grains Cracked or Rolled Oats
1/4 cup red lentils
1 tsp baking powder
1 tsp cinnamon
1/4 tsp fine sea salt
1 cup fresh or frozen blueberries (or the berry of your choice)
1/3 cup shredded coconut (optional)
2 cups whole milk or milk substitute
1/3 cup maple syrup
1 large egg
2 tbsp melted butter, slightly cooled
2 tsp vanilla


  1. Preheat oven to 375.
  2. In an 8″ square baking dish mix the oats, lentils, baking powder, cinnamon and salt. 
  3. Scatter with berries and coconut
  4. In a separate bowl whisk the milk, syrup, egg, butter and vanilla. Pour over the oats and gently stir to evenly distribute.
  5. Bake for 40 minutes – or until the top is golden and the oats have set. Serve warm topped with milk or cream.
