Adapted from the baked oatmeal in Super Natural Every Day, by Heidi Swanson
Overnight oats with lentils for added protein and fiber!
Our Cracked Oats are like steel cut – a little more hearty.
Ingredients
1 1/2 cups Maine Grains Cracked or Rolled Oats
1/4 cup red lentils
1 tsp baking powder
1 tsp cinnamon
1/4 tsp fine sea salt
1 cup fresh or frozen blueberries (or the berry of your choice)
1/3 cup shredded coconut (optional)
2 cups whole milk or milk substitute
1/3 cup maple syrup
1 large egg
2 tbsp melted butter, slightly cooled
2 tsp vanilla
instructions
- Preheat oven to 375.
- In an 8″ square baking dish mix the oats, lentils, baking powder, cinnamon and salt.
- Scatter with berries and coconut
- In a separate bowl whisk the milk, syrup, egg, butter and vanilla. Pour over the oats and gently stir to evenly distribute.
- Bake for 40 minutes – or until the top is golden and the oats have set. Serve warm topped with milk or cream.
