A great GF quick bread using our organic Buckwheat flour – try adding other fruit to the batter or toppings when done!
- Preheat oven to 350 degrees and prep a loaf pan with parchment or lightly greased.
- In a large mixing bowl combine the buckwheat, sugar, cinnamon, baking powder and a pinch of salt. Stir to combine but do not over mix.
- Add the mashed bananas and the vanilla. Mix just to combine.
- Place batter in a lightly greased loaf pan (or lined with parchment). Bake on the middle rack for 5o minutes.
- Let cool before slicing.
Course: Breakfast, Side Dish with yogurt, fresh fruit, peanut butter, etc, Snack – pan fry in butter and sprinkle kosher salt while still warm – eat, enjoy! yum!
