Gluten Free Banana Quick Bread

adapted from a recipe from Veganista

A great GF quick bread using our organic Buckwheat flour – try adding other fruit to the batter or toppings when done!


1 3/4 cups MG Buckwheat flour
1/3 cup cane or coconut sugar
2 heaping tsps cinnamon
2 heaping tsps baking powder
Pinch of kosher salt
4 large ripe bananas mashed
1/3 cup olive oil or coconut oil or nut oil - like walnut or hazelnut
2 tsp vanilla extract
Optional additions: blueberries, chopped nuts, chocolate chips, chopped fresh ginger, fresh fruit and yogurt toppings for slices, grilled slices topped with a sprinkle of kosher salt, topped with peanut butter and sliced strawberries.


  1. Preheat oven to 350 degrees and prep a loaf pan with parchment or lightly greased.
  2. In a large mixing bowl combine the buckwheat, sugar, cinnamon, baking powder and  a pinch of salt. Stir to combine but do not over mix.
  3. Add the mashed bananas and the vanilla. Mix just to combine.
  4. Place batter in a lightly greased loaf pan (or lined with parchment). Bake on the middle rack for 5o minutes.
  5. Let cool before slicing.


Course: Breakfast, Side Dish with yogurt, fresh fruit, peanut butter, etc, Snack – pan fry in butter and sprinkle kosher salt while still warm – eat, enjoy! yum!
