With a protein content of 11%, our organic spelt flour performs incredibly well in both hearty bread loaves and light, flaky pastries. Of all the ancient grains, spelt performs most closely to modern wheat. Use in any recipe that calls for whole wheat flour, adjusting the dough’s hydration as needed.
