Chokladbollar (Swedish Chocolate Balls)

minutesChokladbollar is a chocolatey Swedish treat with rolled oats at their base. While many prepare these as a classic no-bake recipe, we prefer to toast the oats before hand (for both flavor and safety). This recipes includes a touch of coffee to enhance the chocolate flavor but if you’d prefer to omit this from the recipe, feel free to substitute warm water or milk.
Ingredients
1/2 cup butter (room temperature)
1/2 cup unsweetened shredded coconut
1/4 cup granulated sugar
4 tablespoons cocoa powder
3 tablespoons coffee
1 teaspoon vanilla extract
Directions
- Evenly spread the rolled oats on a rimmed baking sheet and toast in the oven at 350°F for 10-15 minutes (until just toasted).
- Once cooled, place 1/2 cup of the toasted oats into a blender or food processor. Pulse until a coarse, floury consistency is achieved.
- In a mixing bowl, stir together the butter, sugar, and vanilla until smooth.
- Mix the coffee and cocoa together, then add to the butter mixture. Stir to incorporate evenly.
- Add the ground oat flour, the remaining toasted rolled oats, shredded coconut, and salt. Mix together until evenly combined. It is easiest to use your hands here.
- Pinch off small pieces of dough (about 1-2 tablespoons) and roll it between your hands to form small balls.
- Coat with shredded coconut or pearl sugar and enjoy!
