Gluten Free Blueberry Bread

hourNaturally GF Buckwheat and Wild Maine Blueberries – a great combo!
Ingredients
Preheat oven to 375ºF
1 heaping cup of fresh wild Maine Blueberries (the tiny kind)
1 1⁄4 cups applesauce
1⁄2 cup melted coconut oil (for non GF sub melted butter)
1⁄2 cup coconut blossom sugar (or granulated sugar, or as we in Maine use – maple sugar!)
1 tsp baking soda
Directions
- Combine all the ingredients in a large bowl and mix carefully till a dough is formed being careful not to mash the blueberries
- Line a baking dish with parchment or grease with a bit of oil, and add the dough
- Cover the pan with foil and bake for about 60 minutes
