Gluten Free Blueberry Bread

Naturally GF Buckwheat and Wild Maine Blueberries – a great combo!


  • Preheat oven to 375ºF

  • 2 cups Maine Grains Organic Buckwheat Flour

  • 1 heaping cup of fresh wild Maine Blueberries (the tiny kind)

  • 1 1⁄4 cups applesauce

  • 1⁄2 cup melted coconut oil (for non GF sub melted butter)

  • 1⁄2 cup coconut blossom sugar (or granulated sugar, or as we in Maine use – maple sugar!)

  • 1 tsp baking soda


  • Combine all the ingredients in a large bowl and mix carefully till a dough is formed being careful not to mash the blueberries
  • Line a baking dish with parchment or grease with a bit of oil, and add the dough
  • Cover the pan with foil and bake for about 60 minutes
