Gluten Free Blueberry Bread

Naturally GF Buckwheat and Wild Maine Blueberries – a great combo!

Ingredients

Makes one loaf - Preheat oven to 375 degrees
2 cups Maine Grains Organic Buckwheat Flour
1 heaping cup of fresh wild Maine Blueberries (the tiny kind)
1 1/4 cup applesauce
1/2 cup melted coconut oil (for non GF sub melted butter)
1/2 cup coconut blossom sugar (or granulated sugar, or as we in Maine use - maple sugar!)
1 tsp baking soda

instructions

  1. Combine all the ingredients in a large bowl and mix carefully till a dough is formed being careful not to mash the blueberries
  2. Line a baking dish with parchment or grease with a bit of oil, and add the dough
  3. Cover the pan with foil and bake for about 60 minutes
