Gluten Free Johnnycakes

The classic cornmeal pancake.
Gluten free pancakes!? Yes please!
Ingredients
1 tsp salt
1 tsp sugar
1 1⁄4 cups boiling water
Directions
- Mix the dry ingredients together in a bowl.
- While stirring, gradually add the boiling water to form a thick batter.
- Spoon or ladle batter into a buttered skillet set to medium on the stovetop. Pancakes should be about 1/8″ thick and be well cooked before flipping.
- Cook till golden brown on both sides.
- Serve with butter, jam or maple syrup!
