Gluten Free Johnnycakes

The classic cornmeal pancake.

Gluten free pancakes!? Yes please!


1 cup Maine Grains Organic Cornmeal
1 tsp salt
1 tsp sugar
1 1/4 cups boiling water


  1. Mix the dry ingredients together in a bowl.
  2. While stirring, gradually add the boiling water to form a thick batter.
  3. Spoon or ladle batter into a buttered skillet set to medium on the stovetop. Pancakes should be about 1/8″ thick and be well cooked before flipping. 
  4. Cook till golden brown on both sides.
  5. Serve with butter, jam or maple syrup!
