Homemade Grape Nuts

hourOne of the classic healthy cereal options, Grape Nuts seem to have a perennial place on the top shelf. Hearty, crunchy, good for digestion. These days you can even find Grape Nuts flavored ice cream. As it turns out, they’re pretty easy to make at home.
Ingredients
3.5 cups Maine Grains Organic Graham Flour
1 teaspoon salt
1 teaspoon baking soda
1.5 cups buttermilk
1/2 cup malted barley flour
Vegetable oil or cooking spray
Directions
- Preheat the oven to 350˚F. Line a baking sheet with parchment paper.
- Combine flour, salt, & baking soda in a large bowl.
- Add buttermilk & malted barley flour, mix until just combined.
- Pour on pan, smooth, bake until edges are just browning and pulling away from pan, about 20 minutes.
- Loosen cake with spatula, and flip it out onto a cooling rack. Set aside to cool for about 40 minutes.
- Reduce oven to 275˚F.
- Working in 4-5 batches, roughly break up the cake into chunks by hand and then pulse in the food processor.
- Spread cereal bits across two baking sheets, bake until completely dry (about 45 minutes), stirring & rotating pans every 15 minutes. Cool in the oven with the door cracked.
