Hot Chocolate Whoopie Pies

The Whoopie Pie originated in Maine, and we are proud of it! This chocolate pie is filled with hot chocolate flavored cream. It’s the perfect summer time treat.

Ingredients

  • Pies
  • 1/2 cup butter, softened

  • 1/2 cup firmly-packed brown sugar

  • 1/2 cup sugar

  • 1 large egg

  • 2 1/2 cups Maine Grains Pastry flour

  • 1/2 cup unsweetened cocoa powder

  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1 teaspoon salt

  • 1 teaspoon instant coffee granules

  • 1 cup milk

  • Filling
  • 1/2 cup soften butter

  • 2 tbsp of coconut sugar or preferred sweetener

  • 3/4 cup hot chocolate mix, homemade or of choice

  • 1/2 tsp cinnamon

  • pinch of salt

  • 1 tsp of vanilla extra

  • 2-4 tbsp of milk or cream if needed for desired consistency

Directions

  • Pies
  • Prep cookie sheets with a baking mat, parchment paper, or lightly grease.
  • In a large bowl, cream together butter and sugars until fluffy.
  • Add the egg and continue beating.
  • In a bowl, combine flour, cocoa, baking powder, baking soda, salt and instant coffee.
  • Have the milk ready in a measuring cup
  • Add the dry ingredients to the butter mixture, alternating with the milk in three auditions, until you obtain a homogenous batter.
  • Chill the dough for at least a few hours.
  • When ready to bake, preheat the oven to 350°F.
  • Drop batter by the tablespoon or cookie scoop (to make 56 cakes) onto prepared baking sheets. Leave 2 inches of space between each cake. Bake for 11 minutes or firm to the touch.
  • Let the cakes cool completely on a wire rack before assembling the whoopie pies. The cakes can be frozen
  • Filling
  • In a medium bowl, beat together butter, sugar until fully. Add hot chocolate mix, vanilla and beat until fluffy for 2-3 minutes. Add milk or cream as needed to obtain a nice consistency to spread.
