Ingredients

  • Crust
  • 1 1/3 cup 1 1/3 Maine Grains Organic All-Purpose Sifted Wheat Flour

  • 1 tbsp 1 sugar

  • 1/4 tsp 1/4 salt

  • 5 tbsp 5 butter, soft room temperature

  • 1 1 egg

  • Lemon Filling**
  • 3/4 cup 3/4 of sugar

  • 1 tbsp 1 cornstarch

  • 4 4 eggs

  • 1/2 cup 1/2 lemon juice

  • 2 tbsp 2 lemon zest

  • 1/4 tsp 1/4 salt

Directions

  • Preheat your oven to 350℉
  • Mix the dry ingredients in a large bowl. Add the wet and combine to form a dough.
  • Roll out or press crust into a 9×13 rectangle baking pan, pressing the dough up the edges a bit.
  • Pre-bake the crust for 25 minutes, while it bakes, prepare the lemon filling.
  • Mix the lemon filling ingredients well, and pass through a sieve to obtain a smooth custard.
  • Add the filling to the hot crust and bake an additional 20 minutes.
  • Let it cool completely before slicing, dust with powdered sugar if desired.
