Lemon Bars

- Crust
1 1/3 cup 1 1/3 Maine Grains Organic All-Purpose Sifted Wheat Flour
1 tbsp 1 sugar
1/4 tsp 1/4 salt
5 tbsp 5 butter, soft room temperature
1 1 egg
- Lemon Filling**
3/4 cup 3/4 of sugar
1 tbsp 1 cornstarch
4 4 eggs
1/2 cup 1/2 lemon juice
2 tbsp 2 lemon zest
1/4 tsp 1/4 salt
Directions
- Preheat your oven to 350℉
- Mix the dry ingredients in a large bowl. Add the wet and combine to form a dough.
- Roll out or press crust into a 9×13 rectangle baking pan, pressing the dough up the edges a bit.
- Pre-bake the crust for 25 minutes, while it bakes, prepare the lemon filling.
- Mix the lemon filling ingredients well, and pass through a sieve to obtain a smooth custard.
- Add the filling to the hot crust and bake an additional 20 minutes.
- Let it cool completely before slicing, dust with powdered sugar if desired.
