A simple and delicious breakfast recipe to use up your leftover mashed potatoes!

Ingredients

  • 2 cups mashed potatoes

  • 1/3 cup Maine Grains Sifted All-Purpose Flour

  • 1/2 cup shredded cheese (cheddar or parmesan)

  • 1 egg

  • 2 Tbsp sliced scallions (plus more for garnish)

  • 1/4 tsp garlic powder

  • salt & pepper (to taste)

  • sour cream (for garnish)

Directions

  • Begin preheating your waffle iron.
  • Combine all ingredients in a large mixing bowl until evenly mixed. The dough should be workable but somewhat sticky. Season with salt and pepper as desired.
  • Grease the waffle iron with a small amount of oil or butter. Scoop batter onto the center (about 1/3 cup for mini-waffles or 2/3 cup for large waffles) and cook for 10-15 minutes until thoroughly browned and crispy.
  • Serve with sour cream, sliced scallions, and finely shredded cheese.

Notes

  • For added flavor and texture, use an even blend of parmigiano reggiano and sharp cheddar cheese in the dough.
