No Bake Energy Bites

minutesThis recipe is a guide, it’s easy to customize with what you have in your pantry. Energy Bites are a great pick me up. They pack wonderfully in lunchboxes or on a hike. If you don’t have a food processor you can use nut flours and date paste and follow the recipe as below.
Ingredients
1 1/2 cups Maine Grains Organic Rolled Oats
1/4 teaspoon coarse salt
1/2 cup roasted almonds
6.5 ounces (185g) of date paste or about 1 cup whole dates
3 tablespoons maple syrup or honey
2 tablespoons nut butter or seed butter of choice
3 tablespoons add-ins (cacao nibs and chia seeds, flax seeds and chopped dried fruits are great)
2 tablespoons cacao or cocoa powder, optional
Directions
- Add almonds or nuts you are using to a pan on medium heat and dry roast them, stirring for a minute. Let it cool a bit.
- While the nuts are still warm, pulse in a food processor with the dates to obtain a paste. The warm almonds will help soften the dates.
- Add nut butter and maple syrup and process until it comes together as a ball.
- Remove from the food processor and place in a bowl. Add the oats, salt, seeds, cocoa nibs and cocoa or cacao powder if using.
- Scoop out about a large tablespoon of the mixture and press into rectangles or roll into balls.
- Store energy bites covered in the refrigerator for up to two weeks. They freezer well for longer storage, up to one month.
