Oat Groat Fruit Pilaf

Sweet or Savory, main or side, endless variations.
Create this dish using your favorite seasonal fruits. Add fresh herbs, like parsley and mint, and a protein for a complete meal.
Oat groats must be soaked overnight or for 4+ hours.

Ingredients

  • Oat Groat Prep
  • 1 1/2 cups Maine Grains Organic Oat Groats, pre-soaked overnight or for 4+ hours

  • Pilaf
  • 1-2 fruits (apple, orange, blueberries, cherries) chopped or cut into small bite sized pieces

  • 1/4 cup dried fruit – cranberries, raisins

  • 3 tbsp combined flax seed, pumpkin seeds, sunflower seeds

  • 3 tbsp chopped fresh herbs – parsley and mint

  • salt and pepper to taste

  • 3 tbsp nuts chopped (optional)

  • Dressing
  • 1 tbsp extra virgin olive oil

  • juice of half of a fresh orange

  • zest from 1 orange

  • 1 tbsp honey or maple syrup (optional)

  • 1/2 tsp sea salt

  • Savory option ideas: Chopped, cooked chicken with blueberries, balsamic vinegar, rosemary, chopped walnuts

Directions

  • Oat Groat Prep
  • Soak oat groats overnight or for 4+ hours.
  • Cook soaked groats in 4 cups water for about 45-50 minutes.
  • In a medium bowl, combine dressing ingredients.
  • Add all of the pilaf ingredients and stir to combine.
  • Stored in a mason jar in the fridge for an instant meal, snack and treat.
