Oat Groat Fruit Pilaf

Sweet or Savory – main or side, a great addition from Cat Morrow of  Legacy Acres.

Create this dish using seasonal – or your favorite – fruits. Add fresh herbs – like parsley and mint, add a protein for a complete meal . A versatile side or main dish. 


Oat Groat Prep:
Pre soak 1 1/2 cups Maine Grains Organic Oat Groats overnight or for 4 + hours
Cook soaked groats in 4 cups water for about 45 - 50 minutes
1 1/2 cups cooked groats
1-2 cups fruit (apple, orange, blueberries, cherries) chopped or cut into small bite sized pieces
1/4 cup dried fruit - cranberries, raisins
2-3 tbsp combined flax seed, pumpkin seeds, sunflower seeds
3 tbsp chopped fresh herbs - parsley and mint
salt and pepper to taste
2-3 tbsp nuts chopped (optional)
1 tbsp extra virgin olive oil
Juice of half of a fresh orange
Zest from 1 orange
1-2 tbsp honey or maple syrup (optional)
1/2 tsp sea salt
Savory option ideas: Chopped, cooked chicken with blueberries, balsamic vinegar, rosemary, chopped walnuts


  1. In a medium bowl, combine dressing ingredients
  2. Add all of the pilaf ingredients and stir to combine
  3. Stored in a mason jar in the fridge for an instant meal, snack and treat.
