Oatmeal Lace Cookies

Beautiful, delicate, crisp and buttery. 
Bake Time: 8 minutes + 15 minutes to cool

Ingredients

  • 1 cup Maine Grains Organic Rolled Oats

  • 1 cup oat flour (make your own by pulsing rolled oats in a blender until fine)

  • 6 tbsp butter

  • 1/2 cup light brown sugar

  • 1 large egg

  • 1 tbsp molasses

  • 1/2 tsp baking soda

  • 1/2 tsp coarse salt

  • 1/4 tsp cloves, optional

Directions

  • Preheat oven to 375° and prep sheets with a baking mat, parchment paper or lightly grease the cookie sheets
  • In a bowl, by hand or with a mixer, cream butter, sugar, egg and molasses.
  • Add to the butter mixture the oatmeal flour, baking soda, cloves and mix well.
  • Fold in old fashioned oats and chill the dough
  • Spoon a heaping teaspoon of dough onto the prepared baking sheet. Only about 6 cookies per baking sheet. They will spread very thin as they bake.
  • Bake 375°F for 6-8 minutes or until dark golden edges form. The center will be soft when you take them out of the oven so do not try to remove them from the tray, they will fall apart. keep them on the cookie sheet for at least 15 minutes to cool completely.
  • Your patience will be rewarded! These buttery crisp cookies will set in a beautiful “lace” pattern.
