Banana Breakfast Cookies

These simple breakfast cookies are nutritious and flavorful! Fill them with dollops of raw honey sweetened cream cheese, for a tasty breakfast cookie sandwich. They’re great for wrapping up and sticking in the fridge for snacking.

Ingredients

  • 2 1/2 cups Maine Grains Organic Rolled Oats

  • 2/3 cup oat flour (see below)

  • 5 bananas

  • 1 large egg

  • 1/2 cup creamy peanut butter

  • 1/4 cup honey , liquid or warmed

  • 2 1/2 tsp sea salt

  • 2 tsp baking powder

  • 2 tsp cinnamon, ground (more to taste)

  • 2 cups mix-ins, chocolate chips, raisins, sunflower seeds, pumpkin seeds, granola.

Directions

  • Preheat oven to 350°F. Line two baking sheets with parchment or silicone baking mats.
  • In a large mixing bowl, smash the bananas thoroughly with a fork. Add the rolled oats and oat flour. Stir in remaining ingredients, (all except the mix-ins) and mix until well combined and smooth.
  • Add the mix-in ingredients you like best. Use a 1/3 cup scoop to dollop dough onto your baking sheets. Sprinkle the tops with raw sugar if desired.
  • Bake your cookies for 15 to 20 minutes, or until golden brown.
  • To make oat flour: Place about 1 cup of oats into the blender and blend until smooth. (you will have some extra)

Notes

  • Note: If your peanut butter and honey are particularly solid, they may need to be warmed a bit before being used.
