Recipe by Ellie Markovitch
Course: Breakfast, Main dish, Side dish, Snack
Traditionally made with bulgur – here whole grain berries are used. A great lunch box item the day after making – as it soaks up all those flavors!
Ingredients
1/2 cup Maine Grains Organic Spelt Berries or Maine Grains Organic Wheat Berries
1 medium cucumber, diced
3 tomatoes, chopped
3 scallions, chopped
2 cups lightly packed parsley leaves, chopped (chopped kale and carrots can also be added)
10 mint leaves, chopped
1/4 cup extra virgin olive oil
1/4 cup lemon juice
large pinches of ground cumin, coriander, allspice
salt and pepper to taste
Directions
- Berry Prep
