Pick a Grain Berry Tabouli

Traditionally made with bulgur – here whole grain berries are used. A great lunch box item the day after making – as it soaks up all those flavors! Thank you to Ellie Markovitch of Story Cooking.


Berry Prep:
Cook 1/2 cup of Maine Grains Organic Spelt Berries or Maine Grains Organic Wheat Berries in 4 cups of water
Bring to a boil over high heat, reduce heat and simmer for 45-50 minutes
Drain berries and allow to cool
Hint: Cook more berries and freeze the excess for a later meal!
1 medium cucumber, diced
3 tomatoes, chopped
2-3 scallions, chopped
2 cups lightly packed parsley leaves, chopped (chopped kale and carrots can also be added)
10 mint leaves, chopped
1/4 cup extra virgin olive oil
1/4 cup lemon juice
Large pinches of ground cumin, coriander, allspice
Salt and pepper to taste


  1. Place the cucumber, tomatoes and scallions in a bowl
  2. Add the parsley, mint and any other greens being used
  3. Add the cooled and cooked berries
  4. Mix in the olive oil and lemon juice
  5. Add spices
  6. Adjust salt and pepper to taste
  7. Serve at room temp or chilled
