Quick & Easy Einkorn Bread

minutesEinkorn’s modern revival has earned it quite the fanbase in recent years. Many accredit their enthusiasm to its light, nutty flavor. Others tout its impressive nutritional profile and highly digestible gluten.
We love it for another reason too; the traditional rules of baking don’t quite apply when you’re using einkorn flour. There’s no kneading. No stretching or folding. No hours-long proofing. It’s a grainiac gatekeeper’s worst nightmare! This delightful old goatgrass pulls every baker back to the very basics – to make bread simply for the sake of bread.
Ingredients
1 ¾ cups (400g) warm water
1 ½ teaspoons (6g) active dry yeast
4 cups (375g) Maine Grains Organic Einkorn Flour
1 ½ teaspoons (10g) kosher salt
Directions
- Combine the water and yeast in a large mixing bowl. Let rest for 10 minutes.
- Mix in the flour and salt to form a wet dough. Cover and let rise for 45 minutes.
- Preheat the oven to 350°F. Grease the inside of a loaf pan.
- Wet your hands and transfer the dough to the prepared loaf pan. Smooth out the surface of the dough, filling the corners and edges of the pan. Cover and let rise for 25 more minutes.
- Uncover and bake for 40 minutes, or until golden brown on top. Let fully cool before slicing.
