Whole Grain Barley

You can add this barley to your weekly food prep routine, for easy soups, porridge, muffins, sourdough breads and more! One of my favorite ways to eat this is with fried onions and mushrooms, you can even add lentils or diced chicken , and some dressing for a make ahead packed meal.” – Cat
Ingredients
3 cups liquid, water or broth
1 pinch of sea salt
Directions
- Combine ingredients in a medium saucepan over medium heat. Bring to a boil, and reduce to a simmer.
- Cover and cook for 20 minutes, stir now and then to prevent sticking. (add more liquid, only if necessary.) Cook for an additional ten minutes, or until mostly tender.
- Drain any extra liquid, cover and allow to steam a few minutes longer if desired. Rinse immediately under cold water if you want to stop the cooking and keep the grain at your desired texture. Can be made ahead and refrigerated or freeze for easy meal preparation.
- Barley can be soaked overnight to encourage easier digestion and nutrient absorption, reduce the cooking time if soaking by about ten minutes.
