Zucchini Pancakes

minutesA timely and seasonal breakfast recipe to use up all of those extra garden zucchinis! For bolder flavor, feel free to substitute additional parmesan in place of mozzarella.
Ingredients
2 cups zucchini (grated)
1/2 cup parmesan cheese (grated)
1/2 cup mozzarella cheese (shredded)
2 large eggs
2 tbsp vegetable oil
salt & pepper (to taste)
sour cream (optional)
Directions
- Combine all ingredients in a large mixing bowl.
- In a fry pan, heat oil over medium-high heat.
- Scoop 1/4 cup of batter into the hot oil and fry each side until crisp (about two minutes).
- Serve with sour cream!
