A timely and seasonal breakfast recipe to use up all of those extra garden zucchinis! For bolder flavor, feel free to substitute additional parmesan in place of mozzarella.

Ingredients

  • 2 cups zucchini (grated)

  • 1/2 cup Maine Grains Sifted All-Purpose Flour

  • 1/2 cup parmesan cheese (grated)

  • 1/2 cup mozzarella cheese (shredded)

  • 2 large eggs

  • 2 tbsp vegetable oil

  • salt & pepper (to taste)

  • sour cream (optional)

Directions

  • Combine all ingredients in a large mixing bowl.
  • In a fry pan, heat oil over medium-high heat.
  • Scoop 1/4 cup of batter into the hot oil and fry each side until crisp (about two minutes).
  • Serve with sour cream!
