Biscuits with Milk Kefir or Buttermilk

Ellie Markovitch of Story Cooking shared this go-to/simple/no yeast all- around perfect biscuit recipe.

Great for dinner warm with butter or for dessert – strawberry shortcake comes to mind!


3/4 cups Maine Grains Organic Spelt flour
1 cup Maine Grains Organic Sifted All-Purpose flour
1 tbsp baking powder
1/2 tsp baking soda
1 tsp sugar
3/4 tsp salt
8 tbsp fat (1 stick unsalted butter works great)
3/4 cup milk kefir or buttermilk
Variation: 1 cup Maine Grains Spelt, 1/4 cup Maine Grains Sifted, 1/2 cup Maine Grains Cornmeal


450 degree oven baked for 15 minutes or til golden brown

  1. Combine flours and all dry ingredients  in a large bowl.
  2. Add diced cold butter and mix into flour  with hands to make pea sized butter bits in the flour
  3. Add the liquid and blend till just mixed together
  4. Turn dough out onto a floured surface , cut into 4 sections, flatten each section into a square, stack onto each other, flatten again, stack again
  5. Flatten into a square and cut into squares or rounds
  6. Tray of cut biscuits can be put into the freezer for 15 minutes to harden butter
  7. Place on a parchment covered cookie sheet and bake 15 minutes or till lightly browned
