Carrot Bread

Classic carrot cake like bread – try a buttercream frosting (seen above from the Miller’s Table Cafe at Maine Grains) or a lemon glaze, whipped cream and/or fresh fruit – for anytime of day or night.
Ingredients
1 cup sugar
3⁄4 cup vegetable or olive oil
1 1⁄2 cups Maine Grains Spelt Flour
1 tsp baking powder
1⁄4 tsp salt
1 tsp cinnamon
1 tsp baking soda
2 eggs
1 cup grated carrot
1⁄2 cup chopped nuts
optional – toppings
Directions
- Preheat oven to 350ºF.
- Combine all dry ingredients in one bowl.
- Mix sugar and oil then add eggs one at a time.
- Combine wet and dry ingredients.
- Fold in carrots and nuts.
- Bake 50-60 minutes in an oiled loaf pan (or line with parchment). Let cool before slicing.
- Add your favorite topping or just serve as is!
