Carrot Bread

Add a frosting and it becomes a wholesome sweet treat!
Classic carrot cake like bread – try a buttercream frosting (seen above from the Miller’s Table Cafe at Maine Grains) or a lemon glaze, whipped cream and/or fresh fruit – for anytime of day or night.


  • 1 cup sugar

  • 3⁄4 cup vegetable or olive oil

  • 1 1⁄2 cups Maine Grains Spelt Flour

  • 1 tsp baking powder

  • 1⁄4 tsp salt

  • 1 tsp cinnamon

  • 1 tsp baking soda

  • 2 eggs

  • 1 cup grated carrot

  • 1⁄2 cup chopped nuts

  • optional – toppings


  • Preheat oven to 350ºF.
  • Combine all dry ingredients in one bowl.
  • Mix sugar and oil then add eggs one at a time.
  • Combine wet and dry ingredients.
  • Fold in carrots and nuts.
  • Bake 50-60 minutes in an oiled loaf pan (or line with parchment). Let cool before slicing.
  • Add your favorite topping or just serve as is!
