Carrot Bread

Add a frosting and it becomes a wonderfully sweet bread treat!

Classic carrot cake like bread – try a buttercream frosting (seen above from the Miller’s Table) or lemon glaze, whipped cream and/or fresh fruit – for anytime of day or night.

Ingredients

1 cup sugar
3/4 cup vegetable oil
1 1/2 cups Maine Grains spelt flour (or Maine Grains Sifted or Whole Wheat)
1 tsp baking powder
1/4 tsp salt
1 tsp cinnamon
1 tsp baking soda
2 eggs
1 cup grated carrot
1/2 cup chopped nuts
optional - toppings

instructions

  1. Preheat oven to 350 degrees
  2. Combine all dry ingredients in one bowl
  3. Mix sugar and oil then add the dry. 
  4. Add eggs one at a time, lightly combine 
  5. Stir in carrots and nuts
  6. Bake 50-60 minutes in an oiled loaf pan (or line with parchment). Let cool before slicing
  7. Add your favorite topping or just serve as is!
