Kamut Crackers

Crackers for every occasion made from wholegrain goodness!
Ingredients
1 1⁄4 cup Maine Grains Rolled Oats
3⁄4 cup Maine Grains Spelt Flour
3⁄4 cup Maine Grains Kamut Flour
1⁄4 cup Maine Grains Buckwheat
1⁄2 cup ground nuts – almonds, walnuts or your choice
1⁄4 cup rice flour
1⁄2 tsp sea salt or kosher salt
2 tbsp ground flax or sesame seeds
1 tbsp (or more) honey or agave
2⁄3 cups plain yogurt, buttermilk or water
2 tbsp olive oil
- Optional herbs
1⁄4 tsp nutmeg or thyme or rosemary – to suit your taste. Top of dough can be sprinkled with extra kosher salt and/or sesame or flax seeds if desired.
Directions
- Whisk the dry ingredients in a large bowl.
- Slowly fold in yogurt (or alternate wet ingredient) and honey or agave.
- Knead dough till just combined.
- Rub 1 tbsp of the olive oil onto the dough. Cover with plastic and let rest for a minimum of 1 hour or more.
- Rub the last of the olive oil onto the dough. Roll out onto parchment to less than 1/4″ thickness.
- Preheat oven to 350ºF.
- Transfer dough to a cookie sheet – you can score the dough with your design – squares, triangles, rectangles, etc. about 3″ in length.
- Bake for about 18 minutes. When done cool on a wire rack – do not leave in pan as they will continue to cook.
- Great for all occasions – dips and cheeses.
