Spelt Thumbprint Cookies

Bake Time: 11-13 minutes + 15 minutes to cool
Ingredients
1 1/2 cups 1 1/2 Maine Grains Organic Spelt Flour
1/4 cup 1/4 butter, soft
1/4 cup 1/4 sour cream
1/4 cup 1/4 light brown sugar
1/4 cup 1/4 granulated sugar
1 1 egg
1/2 tsp 1/2 baking powder
1/4 tsp 1/4 baking soda
1/4 tsp 1/4 coarse salt
Decorate with dried rose petals, dried coconut or chopped nuts. Fill with jam or chocolate.
Directions
- Preheat the oven to 350°F. Lightly grease cookie sheets, or prep with a silicone baking mat or parchment paper.
- In a bowl, by hand or with a mixer, cream butter and sugar. Mix in egg and sour cream.
- Add spelt flour, salt, baking soda and baking powder. Mix well.
- Chill the dough for about an hour.
- Take a teaspoon of dough and make a disc and roll the edges in dried rose petals.
- Make a thumbprint on each cookie, fill with jam or pieces of chocolate.
- Bake 350°F for 11-13 minutes or until the edges are golden.
- Let cookies cool completely before enjoying.
