Easy Apple Cake

minutes“This simple fruit kuchen (German for cake) can be made a ton of different ways. We often eat it to celebrate the coming or going of seasons, so using seasonal fruit is fun. You can use a wide variety of flours and fruits for this recipe. Use about half cup of rye or buckwheat, all whole wheat, Spelt or sifted. When I use peaches or Blueberries, a little Cornmeal is fantastic!” – Cat Morrow
Ingredients
- CAKE
1 1/2 cups 1 1/2 flour – can be a mix of 1/2 cup Maine Grains Organic Buckwheat or Rye and 1 cup Maine Grains Organic Whole Wheat, Spelt or Sifted Flour.
1/2 cup 1/2 butter, melted
3/4 cup 3/4 maple syrup or honey
3 3 eggs
2 tsp 2 baking powder
1/2 tsp 1/2 sea salt
1/2 tsp 1/2 nutmeg
- FRUIT TOPPING
2 2 apples sliced or diced to place on top
2 tbsp 2 turbinado sugar for sprinkling (optional)
Directions
- Preheat oven to 375℉.
- grease a round cake pan with butter.
- In a medium bowl, combine butter, syrup, and eggs. Beat until just combined.
- Add flour, baking powder, sea salt, and nutmeg – stir until smooth.
- Evenly spread batter into your cake pan.
- Top with fruit – get creative with your fruit layout or just toss it on top!
- Sprinkle with sugar, if you like.
- Bake for 30-45 minutes or until golden brown.
