Easy Apple Cake

So simple, so good! Use seasonal fruit if you prefer; Cat likes to mix up her flours – using a little of Maine Grains Organic CornMeal when using peaches or blueberries. See below for more options.


1/2 cup butter, melted
3/4 cup maple syrup - or honey
3 eggs
1 1/2 cup flour - can be a mix of 1/2 cup Maine Grains Organic Buckwheat or Maine Grains Organic Rye and 1 cup Maine Grains Organic Whole Wheat or Maine Grains Organic Spelt or Maine Grains Organic Sifted
2 tsps baking powder
1/2 tsp sea salt
1/2 tsp nutmeg


Fruit Topping:

1-2 small apples sliced or diced to place on top and 2 tbsp turbinado sugar for sprinkling (optional)

  1. Preheat oven to 375 degrees
  2. Prep a round cake pan with butter or grease
  3. In a medium bowl combine butter, syrup and eggs. Beat till just combined
  4. Add flour, baking powder, sea salt and nutmeg – stir till smooth
  5. Evenly spread batter into your cake pan
  6. Top with fruit – get creative with your fruit layout or just toss it on top
  7. Sprinkle with sugar, if you like
  8. Bake for 30-45 minutes or til golden brown
  9. Invite someone for tea and enjoy! Makes a great gift too!
